From the orchards around The Dalles, Oregon in the Columbia River Gorge, to the orchards surrounding Wenatchee, Washington, cherries are a major crop where I live in the Pacific Northwest. Each season I like to create new cherry recipes for pastries, pies and cherry cocktails.
Place the mint leaves in a glass cocktail pitcher. Add the lime juice, cherry juice, white rum and Luxardo Liqueur and stir, pressing down on the mint to release the mint oil.
Fill cocktail glasses with crushed ice, then pour in the cherry mojito cocktail. Add a splash of soda water. Garnish with fresh mint, lemon and lime slices, Bing cherries and maraschino cherries.
You can also make the cocktail with blueberries, blackberries and whatever berry is in season during the summer.
